6 medium russet potatoes, peeled and diced

1 onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1/2 cup sour cream

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

1/2 teaspoon paprika

1/2 cup crispy bacon bits

1/2 cup green onions, chopped (for garnish)

1 cup shredded cheddar cheese (for topping)

Instructions
 

Prepare the Potatoes: In a large pot, bring water to a boil and add the peeled and diced russet potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.

    Sauté the Aromatics: In the same pot, melt a tablespoon of butter (optional) over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combine Broth and Potatoes: Add the cooked potatoes to the pot with the onions and garlic. Pour in the chicken broth, and bring the mixture to a simmer.

        Blend Soup (Optional): For a smoother texture, you can blend part of the soup using an immersion blender or a regular blender (only blend half, leaving some potato chunks for texture). Return the blended soup to the pot.

          Stir in Cream and Seasoning: Add the heavy cream, sour cream, black pepper, salt, and paprika. Mix well and heat gently for about 5-10 minutes until warmed through.

            Serve: Ladle the soup into bowls, and top with crispy bacon bits, shredded cheddar cheese, and chopped green onions for garnish.
