For the pancake batter:

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

For the Oreo filling:

10-12 Oreo cookies, crushed (plus extra for garnish)

½ cup cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

For serving:

Maple syrup

Whipped cream

Chocolate sauce (optional)

Prepare the Oreo filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Stir in the crushed Oreo cookies until well mixed. Set aside.

    Make the pancake batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined; some lumps are okay.

      Heat a non-stick skillet: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of butter or cooking spray.

        Cook the pancakes: Pour about ¼ cup of the pancake batter onto the heated skillet. Using the back of a spoon, make a slight indent in the center of the batter to hold the Oreo filling. Spoon about 1 tablespoon of the Oreo filling into the center of the pancake.

          Add more batter: Carefully pour an additional ¼ cup of pancake batter over the Oreo filling to cover it. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancake and cook until golden brown on the other side, about another 2 minutes.

            Repeat: Repeat steps 4 and 5 with the remaining batter and Oreo filling, adjusting the heat if necessary to prevent burning.

              Serve: Stack the finished pancakes on a plate, drizzle with maple syrup, and top with whipped cream and extra crushed Oreos or chocolate sauce if desired.
