2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 large onion, thinly sliced

3 cloves garlic, minced

2 cups beef broth (low-sodium preferred)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons all-purpose flour

1 tablespoon unsalted butter

Fresh parsley, chopped for garnish

Prepare the Steaks: Season both sides of the ribeye steaks generously with salt and black pepper. Allow the steaks to come to room temperature for about 30 minutes before cooking.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the steaks and sear for 4-5 minutes on each side for medium-rare, or until your desired doneness. Once cooked, remove the steaks from the skillet and transfer them to a plate, covering them with aluminum foil to keep warm.

      Cook the Onions: In the same skillet, add the sliced onions. Reduce the heat to medium and cook the onions for about 8-10 minutes, stirring occasionally, until they are soft and caramelized. Add in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Gravy: Sprinkle the flour over the caramelized onions and stir well to combine. Cook for 1 minute. Slowly pour in the beef broth, stirring constantly to prevent lumps. Add the Worcestershire sauce, Dijon mustard, and thyme. Bring the mixture to a simmer and let it cook for 5-7 minutes until the gravy thickens.

          Finish the Dish: Stir in the butter until melted and fully incorporated. Taste the gravy and adjust the seasoning with salt and pepper if needed.
