1 pound gnocchi (fresh or shelf-stable)

1 pound Italian sausage (sweet or spicy, casings removed)

3 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once heated, add the Italian sausage. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes.

    Add Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes to the skillet. Sauté for about 2-3 minutes until the tomatoes begin to soften.

      Incorporate Gnocchi: Add the gnocchi to the skillet. If using fresh gnocchi, allow them to cook for about 3-4 minutes until they start to float. If using shelf-stable gnocchi, follow package instructions but reduce cooking time to retain texture.

        Pour in Heavy Cream: Once the gnocchi is partially cooked, pour in the heavy cream and stir to combine. Bring to a gentle simmer.

          Add Spinach and Cheese: Incorporate the chopped spinach and grated Parmesan cheese into the mixture. Stir until the spinach wilts and the cheese melts, creating a creamy sauce. Season with Italian seasoning, salt, and black pepper to taste.
