One-Pot Taco Spaghetti

12 oz spaghetti

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (14 oz) diced tomatoes, undrained

1 can (15 oz) black beans, rinsed and drained

2 cups beef broth

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

2 tbsp olive oil

Salt and pepper to taste

Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Add the minced garlic and ground beef (or turkey), cooking until the meat is browned and fully cooked, about 6-8 minutes. Drain any excess fat if necessary.

      Stir in the taco seasoning, diced tomatoes (with their juice), black beans, corn, and beef broth. Bring the mixture to a simmer.

        Add the spaghetti to the pot, ensuring it is submerged in the liquid. Cover and cook for about 12-15 minutes, stirring occasionally, until the spaghetti is al dente and has absorbed most of the liquid.

          Once cooked, turn off the heat and stir in the shredded cheddar cheese until melted. Check seasonings and add salt and pepper to taste.

            Serve warm, topped with your favorite toppings such as sour cream, cilantro, or jalapeños.
