2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced into 1-inch pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for heat)

1 teaspoon dried oregano

1 teaspoon dried thyme

4 cups chicken broth

8 ounces linguine or spaghetti

Juice and zest of 1 large lemon

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium-high heat. Season the diced chicken with salt and pepper, then add it to the pot. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Cook the Aromatics: In the same pot, reduce the heat to medium. Add the minced garlic, red pepper flakes, oregano, and thyme. Sauté for about 1 minute, or until fragrant.

      Add Liquid and Pasta: Pour in the chicken broth, and scrape the bottom of the pot to release any browned bits. Bring the broth to a boil, then add the linguine (or spaghetti). Stir well and cook for approximately 10-12 minutes, or until the pasta is al dente, stirring occasionally.
