12 oz (340g) pasta of your choice (penne, fusilli, or farfalle work well)

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

4 cups vegetable broth

1 cup heavy cream or coconut cream for a dairy-free option

1 cup grated Parmesan cheese (or nutritional yeast for a dairy-free option)

Salt and pepper to taste

Fresh basil leaves for garnish

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for about 2-3 minutes until fragrant and the onion is translucent.
