One-Pan Tuscan Chicken

Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

½ cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic & Tomatoes: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1 minute until fragrant. Then add the halved cherry tomatoes and cook for about 3-4 minutes until they begin to soften.

        Add Spinach & Cream: Stir in the fresh spinach and cook until wilted. Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, stirring until melted and well combined. If you like a little heat, add the red pepper flakes at this stage.

          Combine Chicken & Sauce: Return the seared chicken breasts to the skillet, spooning the sauce over the top. Let it simmer together for another 3-5 minutes, allowing the flavors to meld.

            Serve: Garnish with fresh basil leaves before serving. This dish pairs beautifully with crusty bread, pasta, or rice to soak up the luscious sauce.
