One-Pan Maple Dijon Chicken & Veggies

4 boneless, skinless chicken breasts

1/2 cup pure maple syrup

1/4 cup Dijon mustard

3 tablespoons olive oil

2 teaspoons minced garlic

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 cups baby carrots

1 red bell pepper, sliced

1 zucchini, sliced

1 cup broccoli florets

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small mixing bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, thyme, paprika, salt, and pepper until well combined. This will be your marinade.

      Marinate the Chicken: Place the chicken breasts in a large resealable bag or a shallow dish. Pour half of the marinade over the chicken, making sure each piece is coated evenly. Let it marinate for at least 20 minutes (or up to 2 hours if time allows) in the refrigerator.

        Prepare the Veggies: While the chicken marinates, prepare your vegetables. In a large mixing bowl, combine the baby carrots, bell pepper, zucchini, and broccoli. Drizzle with olive oil, and season lightly with salt, pepper, and a sprinkle of thyme.
