4 boneless, skinless chicken breasts

2 cups baby potatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

2 teaspoons dried oregano

2 teaspoons dried thyme

1 lemon (zested and juiced)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). This ensures a nice, even cook on the chicken and veggies.

    Prepare Ingredients: In a large mixing bowl, combine the halved baby potatoes, asparagus pieces, and halved cherry tomatoes. Drizzle with olive oil, and then add half of the lemon juice, salt, pepper, garlic powder, oregano, and thyme. Mix well to evenly coat the veggies.

      Season the Chicken: In a separate bowl, season the chicken breasts with the remaining lemon juice, lemon zest, salt, pepper, garlic powder, oregano, and thyme. Make sure each piece is well coated with the marinade.

        Combine on the Baking Sheet: On a large baking sheet (or roasting pan), arrange the seasoned chicken breasts in the center and surround them with the mixed vegetables.

          Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (165°F or 74°C internal temperature) and the veggies are tender. If desired, you can broil for an additional 2-3 minutes for a crispy finish on top of the chicken.

            Garnish and Serve: Once done, remove from the oven and let it rest for 5 minutes. Garnish with fresh chopped parsley before serving for a pop of color and freshness.
