1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup vegetable or chicken broth

1 cup water

Juice of 1 large lemon (about ¼ cup)

Zest of 1 lemon

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prepare the Shrimp: Season the peeled and deveined shrimp with salt, pepper, and red pepper flakes. Set aside to marinate briefly while you handle the other ingredients.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil and butter. Once the butter is melted, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

      Add Rice: Stir in the rice, allowing it to toast slightly in the pan for about 2 minutes. This will enhance the flavor of the rice.

        Combine Liquids: Pour in the vegetable or chicken broth and water, and add the lemon juice and zest. Stir to combine everything together and bring the mixture to a gentle simmer.

          Cook the Rice: Cover the skillet with a lid and reduce the heat to low. Let it cook for 15-20 minutes or until most of the liquid is absorbed and the rice is tender. Avoid lifting the lid too often to ensure proper steaming.

            Add Shrimp: Once the rice is cooked, carefully place the seasoned shrimp on top of the rice. Cover the skillet again and cook for an additional 5-7 minutes until the shrimp turns pink and opaque.
