1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

4 cups chicken broth

1 ½ cups cooked chicken, shredded or diced

1 package (16 oz) potato gnocchi

2 cups baby spinach

½ cup heavy cream

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and the onion is translucent.

    Season and Add Broth: Stir in the dried thyme, rosemary, salt, black pepper, and red pepper flakes (if using). Pour in the chicken broth and bring the mixture to a gentle boil.
