1 whole chicken (about 3-4 lbs), cleaned and cut into pieces

8 cups of low-sodium chicken broth

1 medium onion, chopped

3 carrots, sliced

2 celery stalks, sliced

3 cloves of garlic, minced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt (for dumplings)

1 cup milk

1/4 cup unsalted butter, melted

Fresh parsley, chopped (for garnish)

Prepare the Chicken: In a large pot, bring the chicken broth to a boil. Add the chicken pieces, chopped onion, carrots, celery, garlic, thyme, rosemary, salt, and pepper to the pot. Reduce to a simmer and cook for about 30-35 minutes, or until the chicken is cooked through.

    Shred the Chicken: Once the chicken is cooked, remove it from the pot and let it cool slightly. Shred the meat, discarding the bones and skin, then return the shredded chicken to the pot.

      Prepare the Dumplings: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).

        Add the Peas: Stir in the frozen peas into the soup and bring it to a gentle simmer.

          Drop in Dumplings: Using a tablespoon, drop spoonfuls of the dumpling batter directly on top of the simmering soup. Be careful not to crowd them; you may have to do this in batches. Cover the pot tightly with a lid.

            Cook the Dumplings: Allow the dumplings to steam for about 15-20 minutes without lifting the lid. They should be fluffy and cooked through.
