2 cups granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup whole milk

1/4 cup unsalted butter

1 teaspoon vanilla extract

1 1/2 cups semi-sweet chocolate chips

1 cup mini marshmallows (optional for extra creaminess)

1/4 teaspoon salt

Chopped nuts (walnuts or pecans, optional)

Instructions
 

Prepare the Pan: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Grease lightly with butter or cooking spray.

    Combine Dry Ingredients: In a medium saucepan over medium heat, whisk together the granulated sugar, cocoa powder, and salt until well blended.

      Add Milk and Butter: Slowly stir in the whole milk and add the unsalted butter. Cook the mixture while continuously stirring until it comes to a gentle boil.

        Boil the Mixture: Let the mixture boil without stirring for about 4 to 5 minutes. Keep an eye on it and reduce the heat if it starts to bubble over. Use a candy thermometer to monitor the temperature; it should reach 234°F (soft ball stage).

          Remove from Heat: Once the desired temperature is reached, remove the saucepan from the heat and let it sit for a minute to cool slightly.

            Add Chocolate and Vanilla: Stir in the semi-sweet chocolate chips, vanilla extract, and mini marshmallows (if using). Mix until everything is melted and smooth.

              Pour into the Pan: Quickly pour the fudge mixture into the prepared baking dish. Spread it evenly with a spatula.

                Cool and Set: Allow the fudge to cool at room temperature for at least 2 hours, or until it is firm to the touch. You can also refrigerate it to speed up the cooling process.
