Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or plant-based milk)

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1/2 teaspoon vanilla extract

1/2 cup Nutella (more for drizzling)

Powdered sugar (for dusting)

Fresh strawberries or bananas (for garnish, optional)

Instructions

Make the Batter: In a mixing bowl, combine the flour, sugar, baking powder, and salt. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract. Slowly add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix; the batter should remain slightly lumpy.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with a bit of butter.

Make the Pancake Bites: Pour about 1 tablespoon of batter onto the skillet to form small pancakes. Cook for about 1 minute, then carefully spoon about 1 teaspoon of Nutella onto the center of each pancake. Immediately cover with another tablespoon of batter to seal the Nutella inside.

Flip & Cook: Cook for an additional 1-2 minutes, or until bubbles start forming on the surface and the edges look cooked. Gently flip the pancake bites and cook for another 1-2 minutes until golden brown and cooked through. Remove the pancake bites from the skillet and keep them warm.

Serve: Dust the pancake bites with powdered sugar and drizzle some extra Nutella on top. Garnish with fresh strawberries or banana slices if desired. Serve warm and enjoy the gooey chocolate surprise inside!
