2 cups rolled oats

1 cup grated zucchini (squeeze out excess moisture)

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 teaspoon cinnamon

1/4 cup chopped nuts (walnuts or almonds)

1/4 cup mini chocolate chips (optional)

1/4 cup dried cranberries or raisins (optional)

Instructions
 

Prepare the Pan: Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, salt, cinnamon, chopped nuts, chocolate chips, and dried fruit. Stir until well-mixed.

      Combine Wet Ingredients: In a separate bowl, mix the grated zucchini, almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Use a spatula or your hands to mix everything together until all the oats are evenly coated and the mixture is sticky.

          Press into Pan: Transfer the mixture into the prepared baking pan. Press it down firmly with your hands or a spatula to create an even layer.

            Chill: Place the pan in the refrigerator for at least 1 hour to set. This will make the bars easier to cut and help them firm up.
