Ingredients

2 cups rolled oats

1 cup sliced strawberries (fresh or frozen)

1 cup Greek yogurt (plain or vanilla)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup chopped nuts (e.g., almonds or walnuts) - optional

1/4 cup mini chocolate chips or yogurt-covered raisins - optional

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Mix Base Ingredients: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until everything is evenly mixed.

Add Strawberries: Gently fold in the sliced strawberries to your oat mixture, making sure to distribute them evenly without mashing them.

Combine Crunch Components: If desired, add chopped nuts and mini chocolate chips (or yogurt-covered raisins) to the mixture for additional crunch and flavor, mixing until combined.

Press into the Pan: Transfer the mixture into the prepared baking dish. Using a spatula or your hands, firmly press the mixture down to create an even layer. Ensure it is densely packed for the best texture.

Add Yogurt Layer: Spread the Greek yogurt evenly over the pressed oat mixture. You can also layer it with an extra sprinkle of sliced strawberries on top for a beautiful finish.

Set the Bars: Cover the dish with plastic wrap or foil, and refrigerate for at least 2-3 hours or until firm. For an even firmer texture, you can chill them overnight.

Slice and Serve: Once set, lift the bars out of the dish using the parchment overhang. Cut into squares or rectangles, and serve chilled.

Storage: Store any leftovers in an airtight container in the fridge for up to one week.
