Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

2 cups fresh strawberries, hulled and sliced

Extra strawberries for topping (optional)

Mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until thoroughly combined and crumbly. Press the mixture evenly into the bottom of a 9x9 inch baking pan to form a crust. Use a flat spatula to pack it down firmly.

Make the Cream Cheese Layer: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful not to deflate the whipped cream.

Layer the Cream Cheese Mixture: Spread half of the cream cheese mixture over the prepared graham cracker crust, smoothing it into an even layer.

Add Strawberries: Evenly distribute half of the sliced strawberries over the cream cheese layer. Gently press them in for better adhesion.

Add More Cream: Spread the remaining cream cheese mixture on top of the strawberries, smoothing it out carefully.

Finish with Strawberries: Top with the remaining sliced strawberries, arranging them as desired.

Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight if time allows, to let the bars set.

Serve: Once set, cut the bars into squares. You can garnish with extra strawberries and mint leaves for an elegant touch before serving. Enjoy the light and creamy deliciousness!
