No-Bake Popsicles with Pineapple

2 cups fresh pineapple chunks

1 cup coconut milk (canned or carton)

1/4 cup honey or agave syrup (adjust for sweetness)

1 tablespoon lime juice

1 teaspoon vanilla extract

1/2 cup shredded coconut (optional for added texture)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Pineapple: If using whole pineapple, peel, core, and chop into chunks. Measure 2 cups and place in a blender.

    Blend the Mixture: Add the coconut milk, honey or agave syrup, lime juice, and vanilla extract to the blender. Blend on high until the mixture is smooth and creamy, about 1-2 minutes.

      Add Texture (Optional): If you want some texture, stir in the shredded coconut. You can also reserve some coconut to sprinkle on top of each popsicle if desired.

        Fill the Molds: Carefully pour the mixture into popsicle molds, leaving a tiny bit of space at the top as the mixture may expand when frozen. If using them, place a few mint leaves in each mold for a refreshing hint of flavor.

          Insert Sticks and Freeze: Insert the popsicle sticks into the molds. Freeze for at least 4-6 hours or until completely solid. For best results, overnight freezing is recommended.

            Remove from Molds: To release the popsicles, run warm water over the outside of the molds for a few seconds until they loosen up, then gently pull them out.

              Serve and Enjoy: Serve immediately, garnished with extra shredded coconut and fresh mint leaves if desired. Enjoy the refreshing taste of the tropics!
