Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

Orange Pineapple Swirl:

1 cup crushed pineapple, drained

½ cup fresh orange juice

1 tbsp orange zest

2 tbsp cornstarch

2 tbsp granulated sugar

Garnish:

Fresh pineapple slices (optional)

Orange zest (optional)

Instructions
 

Prepare the Crust:

    - In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the mixture resembles wet sand.

      - Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it's packed tightly. Chill in the refrigerator while you prepare the filling.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add powdered sugar and vanilla extract while continuing to blend until well combined.

              - In another bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture until fully combined and smooth.

                Prepare the Orange Pineapple Swirl:

                  - In a small saucepan over medium heat, combine the crushed pineapple, fresh orange juice, orange zest, cornstarch, and granulated sugar.

                    - Cook while stirring continuously until the mixture thickens and starts to bubble. This should take about 5-7 minutes. Remove from heat and let it cool slightly.

                      Assemble the Cheesecake:

                        - Pour half of the cheesecake filling into the prepared crust and smooth it out.

                          - Spoon half of the orange pineapple mixture over the cheesecake filling and use a knife or skewer to create swirls.

                            - Add the remaining cheesecake filling on top and repeat the swirling process with the rest of the orange pineapple mixture.

                              Chill:

                                - Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow it to set properly.

                                  Serve:

                                    - Once set, carefully remove the sides of the springform pan. Garnish with fresh pineapple slices and a sprinkle of orange zest, if desired. Slice and serve chilled.
