For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 tsp vanilla extract

1 cup orange juice (freshly squeezed is best)

Zest of 1 orange

1 tbsp gelatin (optional, for added firmness)

For the topping (optional):

Whipped cream

Orange slices

Zest for garnish

Instructions
 

Prepare the crust:

    - In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and mix until the crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to create a solid crust. Chill in the refrigerator while you prepare the filling.

        Make the filling:

          - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add the powdered sugar, mixing until fully incorporated.

              - In a separate bowl, whip the heavy cream with the vanilla extract until medium peaks form.

                - Gently fold the whipped cream into the cream cheese mixture until well combined.

                  - Add the orange juice and zest to the mixture and stir until just blended.

                    - (If using gelatin for added firmness, dissolve it in 2 tbsp of hot water and fold it into the mixture at this stage.)

                      Combine and chill:

                        - Pour the orange cheesecake filling over the chilled crust, smoothing the top with a spatula.

                          - Cover with plastic wrap and refrigerate for at least 4 hours, or until set (preferably overnight for best results).

                            Serve:

                              - Once set, carefully remove the cheesecake from the springform pan.

                                - Optionally, top with whipped cream, orange slices, and additional orange zest for garnish.
