1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

3 tablespoons brown sugar

¼ teaspoon salt

For the Cheesecake Filling:

16 oz (450 g) cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1/3 cup fresh lime juice (about 2 limes)

1 ½ cups ripe mango puree (about 2-3 ripe mangos)

1 cup heavy whipping cream

For the Topping:

1 cup fresh mango, diced

1 tablespoon lime juice

Mint leaves for garnish (optional)

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, melted butter, brown sugar, and salt. Stir until well mixed and the mixture resembles wet sand. Press this mixture firmly into the bottom of a lined 9x9 inch (or similar size) baking dish to form an even crust. Refrigerate while you prepare the filling.

    Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar, continuing to beat until well combined.

      Add Flavors: Mix in the vanilla extract and lime juice until fully incorporated. Then, add the mango puree and blend until the mixture is smooth and vibrant in color.
