Instructions

Prepare the Crust:

    - In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until all crumbs are evenly coated.

      - Press the mixture firmly into the bottom of a greased 9x9 inch baking pan to form an even layer. Set aside.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract and mix until well incorporated.

            - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

              - Toss the diced peaches with lemon juice to prevent browning, then fold them into the cheesecake mix along with the optional peach preserves for added sweetness. Mix gently until the peach pieces are evenly distributed.

                Assemble the Bars:

                  - Pour the cheesecake filling over the prepared crust in the baking pan, spreading it evenly with a spatula.

                    - Smooth the top and cover with plastic wrap or aluminum foil. Place in the freezer for at least 4 hours, or until firm.

                      Prepare the Peach Topping:

                        - In a small bowl, combine the sliced peaches, honey, and lemon juice. Mix gently and let sit for about 10 minutes, allowing the flavors to meld.

                          Serve:

                            - Once the cheesecake is fully set, remove it from the freezer. Let it sit at room temperature for about 10 minutes before slicing.

                              - Cut into bars and top each piece with the fresh peach topping before serving. Enjoy your refreshing dessert!
