1 pound fresh figs, stems removed and roughly chopped

1 cup granulated sugar

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract (optional)

1/2 teaspoon cinnamon (optional)

1/4 teaspoon salt

1 tablespoon water (if needed)

Prep the Figs: Place the chopped figs into a large mixing bowl. If you prefer a smoother texture, you can mash them lightly with a fork.

    Mix with Sugar: Add the granulated sugar to your figs. Toss the figs and sugar together gently until the figs are well-coated. Allow the mixture to sit for about 30 minutes. This will help draw out the natural juices from the figs.

      Add Flavorings: After 30 minutes, add the fresh lemon juice, vanilla extract, cinnamon, and salt to the bowl. Mix well to combine all the ingredients.

        Cook the Mixture: Transfer the fig mixture to a medium saucepan and cook over medium heat. Stir continuously to ensure the sugar dissolves completely. Bring the mixture to a gentle simmer.

          Simmer and Thicken: Allow the fig mixture to simmer for about 15-20 minutes, stirring occasionally. The jam will thicken as it cooks. If it seems too thick, add a tablespoon of water to loosen it up.

            Check Consistency: After 15-20 minutes, check the consistency by placing a spoonful of the jam on a plate and letting it cool for a minute. If it holds its shape, it’s ready. If not, cook for a few more minutes.

              Cool and Jar: Once the desired consistency is reached, remove the saucepan from heat. Let the fig jam cool to room temperature. Then transfer it to a clean, sterilized jar.

                Refrigerate: Seal the jar tightly and refrigerate. The fig jam will continue to thicken as it cools and can be stored in the fridge for up to 2 weeks.
