Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (or almond butter)

1/4 cup honey (or maple syrup for a vegan option)

1/2 cup ground flaxseed

1/2 cup chocolate chips (dark or semi-sweet)

1/4 cup chia seeds

1/2 tsp vanilla extract

A pinch of sea salt

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, and a pinch of sea salt. Stir them together until they are well mixed.

Combine Wet Ingredients: In a separate bowl, add the natural peanut butter and honey (or maple syrup). Stir in the vanilla extract until smooth and well-blended.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix everything together until all the oats and seeds are evenly coated.

Add Chocolate Chips: Gently fold the chocolate chips into the mixture. Ensure they are evenly distributed throughout.

Form Bites: Once the mixture is well combined, use your hands to scoop out about 1-inch portions and roll them into balls. Place each ball on a parchment-lined baking sheet or plate.

Chill: Place the energy bites in the refrigerator for about 30 minutes to set. This will help them hold their shape better.

Store: After they’re chilled and firm, transfer the energy bites to an airtight container. You can store them in the refrigerator for up to a week, or in the freezer for up to a month.
