Ingredients

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 cup chocolate chips (dark or semi-sweet)

1/4 cup shredded coconut (optional)

1/4 cup chopped nuts (almonds, peanuts, or walnuts, optional)

Pinch of sea salt

Instructions

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang on the edges for easy removal later.

Mix Wet Ingredients: In a medium saucepan, combine creamy peanut butter and honey (or maple syrup) over low heat. Stir frequently until the mixture is warm, smooth, and well-combined (about 2-3 minutes). Remove from heat and mix in the vanilla extract and a pinch of sea salt.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chocolate chips, shredded coconut, and chopped nuts (if using). Stir until all dry ingredients are well integrated.

Combine Wet and Dry: Pour the warm peanut butter mixture over the dry ingredients. Use a spatula or wooden spoon to mix until everything is evenly coated and combined.

Press the Mixture: Transfer the mixture to the prepared baking dish. With the spatula or your hands (dampen them slightly to prevent sticking), press the mixture down firmly and evenly into the dish.

Chill: Refrigerate the bars for at least 1 hour, or until they are set and firm. For best results, chill overnight.

Cut and Serve: Once set, lift the bars out of the pan using the parchment paper overhang. Cut into squares or bars of your desired size.

Store: Store any leftover bars in an airtight container in the refrigerator for up to one week.
