Ingredients

1 cup almond flour

1 cup rolled oats

½ cup creamy peanut butter (or any nut butter of choice)

⅓ cup pure maple syrup

1 teaspoon vanilla extract

½ teaspoon salt

⅔ cup mini chocolate chips

¼ cup chopped walnuts (optional)

Instructions

Mix the Base: In a large mixing bowl, combine the almond flour, rolled oats, and salt. Mix well until evenly combined.

Add Wet Ingredients: In a separate bowl, whisk together the peanut butter, maple syrup, and vanilla extract until smooth. Pour this mixture into the dry ingredients.

Combine: Stir until everything is well combined. The mixture should be thick but manageable. If it's too dry, add a splash of water or more maple syrup as needed.

Add Chocolate Chips: Fold in the mini chocolate chips and walnuts if using. Make sure they are evenly distributed throughout the dough.

Press into a Pan: Line an 8x8 inch (or similar size) baking pan with parchment paper, allowing some paper to hang over the edges for easy removal. Transfer the cookie dough mixture into the pan and press it down firmly, spreading it out evenly with a spatula or your hands.

Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 1-2 hours until the bars are firm.

Slice and Serve: Once chilled and set, remove from the pan using the parchment paper overhang. Cut into squares or rectangles. Enjoy chilled or at room temperature!
