Ingredients

2 large ripe bananas, mashed

1 cup heavy whipping cream

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup vanilla wafer cookies, crushed (plus extra for garnish)

1 tsp lemon juice

¼ cup milk

1 tsp gelatin (or agar-agar for vegetarian option)

2 tbsp warm water

Instructions

Prepare the Cream Cheese Mixture: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well incorporated.

Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined, being careful to maintain the airiness of the whipped cream.

Add Bananas: Fold in the mashed bananas and lemon juice. This will add both flavor and a little acidity to balance the sweetness.

Prepare the Gelatin: In a small bowl, dissolve the gelatin in warm water. Let it cool for a moment and then gradually stir it into the banana-cream cheese mixture until fully integrated.

Combine with Cookies: Gently fold in the crushed vanilla wafer cookies, ensuring they are evenly distributed throughout the mixture for a delightful crunch.

Assemble the Cheesecake: Transfer the mixture into a 9-inch springform pan or a pie dish, spreading it evenly with a spatula. Smooth the top for a neat finish.

Chill: Cover with plastic wrap and refrigerate for at least 4 hours or until the cheesecake is set and firm.

Serve: Once set, remove the cheesecake from the springform pan. Garnish the top with additional crushed vanilla wafers and sliced bananas before serving.
