12 oz mozzarella cheese sticks (approximately 12 sticks)

1 cup all-purpose flour

2 large eggs

1 cup seasoned bread crumbs

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon black pepper

Oil for frying (vegetable or canola oil)

For the Nashville Hot Spice Mix:

1/4 cup cayenne pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon brown sugar

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Dipping Sauce:

1/2 cup ranch dressing or blue cheese dressing

1 tablespoon hot sauce (optional)

Prep the Cheese: Freeze the mozzarella sticks for at least 1 hour. This will help them keep their shape while frying.

    Prepare the Dredging Station: In three separate bowls, set up your breading station:

      - Bowl 1: Place the flour.

        - Bowl 2: Beat the eggs together.

          - Bowl 3: Mix the seasoned bread crumbs with smoked paprika, garlic powder, onion powder, salt, and black pepper.

            Bread the Mozzarella Sticks:

              - Remove the frozen cheese sticks from the freezer.

                - Dredge each stick in flour, ensuring it gets fully coated.

                  - Dip it in the beaten eggs, allowing excess to drip off.

                    - Finally, coat the stick in the seasoned bread crumbs, pressing lightly to adhere. Repeat for all mozzarella sticks.

                      Prepare the Nashville Hot Spice Mix: In a small bowl, mix together the cayenne pepper, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper.

                        Heat the Oil: In a deep pan or fryer, heat about 3 inches of oil over medium heat until it reaches 350°F (175°C).

                          Fry the Cheese Sticks: Fry the mozzarella sticks in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use tongs to turn them halfway for even cooking.
