12 oz penne pasta

2 cups fresh spinach, roughly chopped

1 can (14 oz) artichoke hearts, drained and chopped

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente according to package instructions. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped spinach and cook until wilted. Stir in the chopped artichoke hearts and cook for an additional 2-3 minutes. Remove from heat.

        Prepare the Cheese Mixture: In a large mixing bowl, combine ricotta cheese, ¾ cup of mozzarella cheese, ½ cup of Parmesan cheese, garlic powder, onion powder, red pepper flakes (if using), and season with salt and pepper.

          Combine Ingredients: Add the cooked pasta and sautéed vegetables to the cheese mixture, stirring until everything is well combined.

            Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella and Parmesan cheese evenly on top.

              Bake: Place in the preheated oven and bake for 25-30 minutes, or until the cheeses are bubbly and golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.
