1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

3 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 cup cherry tomatoes, halved

Salt and black pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the peeled and deveined shrimp with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, and a pinch of salt and black pepper. Toss to coat the shrimp evenly. Allow to marinate for about 20-30 minutes to absorb the flavors.

    Prepare the Vegetables: While the shrimp is marinating, chop the onion, red bell pepper, and cherry tomatoes. Set aside.

      Sauté Aromatics: In a large skillet or frying pan, heat a tablespoon of olive oil over medium heat. Add the onions and garlic, sautéing until the onions become translucent, about 3-4 minutes.

        Cook the Vegetables: Add the diced red bell pepper and halved cherry tomatoes to the skillet. Cook for an additional 3-4 minutes until the vegetables are tender and fragrant.

          Cook the Shrimp: Increase the heat to medium-high and add the marinated shrimp to the skillet. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Be careful not to overcook!

            Garnish and Serve: Remove the skillet from heat. Garnish the shrimp with sliced green onions and chopped parsley for a fresh touch. Serve hot with lemon wedges on the side.
