10 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning (store-bought or homemade)

3 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup Parmesan cheese, grated

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Optional: Red pepper flakes for extra heat

Cook Pasta: In a large pot of salted boiling water, cook the linguine or fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Season Shrimp: In a bowl, toss the shrimp with Cajun seasoning, ensuring they are well-coated.

      Sauté Shrimp: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the shrimp to the skillet in a single layer. Sauté for about 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Cook Vegetables: In the same skillet, add the remaining olive oil. Add the chopped onion and bell pepper, sautéing for around 5 minutes until they soften. Add minced garlic and cook for an additional 1 minute until fragrant.

          Add Tomatoes: Stir in the cherry tomatoes and cook for another 2-3 minutes until they begin to soften and release their juices.

            Create Sauce: Reduce the heat to medium-low. Pour in the heavy cream and stir until combined. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
