Ingredients

For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

1 cup milk

2 large eggs

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp vanilla extract

2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)

For the Crumble Topping:

½ cup all-purpose flour

½ cup brown sugar, packed

½ tsp cinnamon

¼ cup unsalted butter, melted

½ cup rolled oats

⅓ cup chopped nuts (walnuts or pecans, optional)

For the Glaze:

1 cup powdered sugar

2-3 tbsp milk

½ tsp vanilla extract

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.

    Make the Cake Batter:

      - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

            - Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

              - Gently fold in the diced apples.

                Prepare the Crumble Topping:

                  - In a small bowl, combine the flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture resembles coarse crumbs.

                    - Stir in the rolled oats and nuts (if using).

                      Assemble the Cake:

                        - Pour the cake batter into the prepared baking pan and spread it evenly.

                          - Sprinkle the crumble topping over the cake batter.

                            Bake:

                              - Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean. The top should be golden and the edges should pull slightly away from the pan.

                                Make the Glaze:

                                  - While the cake is baking, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

                                    Cool and Glaze:

                                      - Once the cake is baked, allow it to cool in the pan for about 15 minutes before transferring it to a wire rack.

                                        - Drizzle the glaze over the cake while it's still warm for a beautiful finish.

                                          Serve and Enjoy:

                                            - Slice and serve warm or at room temperature. This coffee cake pairs wonderfully with a cup of coffee or tea.
