1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons heavy cream

1 teaspoon peppermint extract

1 cup whipped cream (for folding in)

½ cup mini chocolate chips (optional)

For the Mint Chocolate Ganache Topping:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

½ teaspoon peppermint extract

For Garnish:

Fresh mint leaves

Chocolate shavings

Prepare the Chocolate Cake:

    - Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

      - In a large mixing bowl, combine all dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt).

        - In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.

          - Add the wet ingredients to the dry ingredients and mix until just combined. Carefully stir in the boiling water until the batter is smooth (the batter will be thin).

            - Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in pans for 10 minutes before transferring to wire racks to cool completely.

              Make the Mint Chocolate Cheesecake Layer:

                - In a large bowl, beat the softened cream cheese until smooth.

                  - Gradually add in the powdered sugar, vanilla extract, and heavy cream while mixing until fully incorporated.

                    - Mix in the peppermint extract. Fold in the whipped cream gently until well combined, followed by the mini chocolate chips if using.

                      - Once the cake layers are completely cooled, place one layer on a serving plate and spread a thick layer of the mint chocolate cheesecake mixture on top.

                        Assemble the Cake:
