6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup cooked ground beef or turkey (seasoned with taco seasoning)

1/2 cup diced tomatoes (fresh or canned, drained)

1/4 cup finely chopped red onion

1/4 cup chopped green bell pepper

1/4 cup sliced olives (optional)

1/4 teaspoon garlic powder

1/4 teaspoon chili powder

Salt and pepper to taste

1 package of mini phyllo pastry cups (usually found in the frozen section)

Fresh cilantro for garnish

Salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with mini phyllo pastry cups.

    Prepare the Filling: In a large bowl, whisk together the eggs and milk until thoroughly combined. Stir in the shredded cheddar cheese, cooked ground meat, diced tomatoes, red onion, bell pepper, olives (if using), garlic powder, chili powder, salt, and pepper.

      Fill the Cups: Carefully spoon the egg mixture into each mini phyllo pastry cup, filling each about 3/4 full.

        Bake: Place the filled muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiches are puffed up and golden on top. You can check doneness by inserting a toothpick in the center; it should come out clean.
