Ingredients
  

For the Tart Shells:

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

¼ cup granulated sugar

1 large egg yolk

1 teaspoon vanilla extract

¼ teaspoon salt

For the Pecan Filling:

1 cup pecans, chopped

¾ cup light corn syrup

¼ cup brown sugar, packed

¼ cup granulated sugar

3 large eggs

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

¼ teaspoon salt

¼ teaspoon ground cinnamon (optional)

Instructions
 

Make the Tart Shells:

    - In a mixing bowl, combine the softened butter and granulated sugar. Cream them together until light and fluffy.

      - Add the egg yolk and vanilla extract to the mixture, stirring until well incorporated.

        - In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

          - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

            Preheat the Oven:

              - Preheat your oven to 350°F (175°C).

                Prepare Mini Tart Pan:

                  - Once the dough is chilled, remove it from the refrigerator. On a lightly floured surface, roll out the dough to about 1/8 inch thick.

                    - Cut out circles using a cookie cutter or a glass, then gently press the circles into a mini tart pan. Prick the bottom of each shell with a fork to prevent puffing.

                      Blind Bake the Tart Shells:

                        - Bake the tart shells in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and allow to cool slightly.

                          Prepare the Pecan Filling:

                            - In a mixing bowl, whisk together the corn syrup, brown sugar, granulated sugar, eggs, melted butter, vanilla extract, salt, and cinnamon (if using) until smooth and well combined.

                              - Stir in the chopped pecans until evenly distributed.

                                Fill the Tart Shells:

                                  - Carefully pour the pecan filling into each tart shell, filling them about 3/4 full. Be cautious not to overfill as the mixture may bubble while baking.

                                    Bake the Tarts:

                                      - Return the filled tart pan to the oven and bake for an additional 15-18 minutes, or until the filling is set and slightly puffed.

                                        Cool and Serve:

                                          - Allow the mini pecan tarts to cool in the pan for about 10 minutes, then gently remove them and transfer to a wire rack to cool completely.

                                            - Serve at room temperature, and enjoy these delightful mini treats!
