12 wonton wrappers

1 lb chicken breast, diced

1 bell pepper (any color), sliced

1 small onion, diced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups:

      - Lightly grease a muffin tin.

        - Gently press each wonton wrapper into the muffin tin, forming little cups. Bake in the preheated oven for 8-10 minutes, or until golden brown and crispy. Remove and let cool slightly.

          Cook the Chicken and Vegetables:

            - In a large skillet, heat olive oil over medium heat.

              - Add the diced chicken and season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.

                - Add the sliced bell pepper and diced onion to the skillet. Sauté for an additional 3-4 minutes, or until the vegetables are tender.

                  Assemble the Wonton Cups:

                    - Spoon the chicken and vegetable mixture evenly into each baked wonton cup.

                      - Top each filled cup with shredded cheddar cheese.
