1 lb cooked chicken breast, shredded

1 tablespoon olive oil

1 small red bell pepper, finely chopped

1 small green bell pepper, finely chopped

1 small onion, finely chopped

1 tablespoon fajita seasoning

1 cup shredded cheddar cheese

1 can (8 oz) refrigerated crescent roll dough

1/4 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salsa (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add the finely chopped red and green bell peppers and onion. Sauté for about 5 minutes, or until the vegetables are softened.

      Add Chicken and Seasoning: Stir in the shredded cooked chicken and fajita seasoning. Cook for an additional 3-4 minutes, ensuring the chicken is heated through and well-coated with the seasoning. Remove from heat and allow to cool slightly.

        Roll the Crescents: Unroll the crescent roll dough and separate it into triangles. On the wider end of each triangle, spoon about 1-2 tablespoons of the chicken fajita mixture. Top with a sprinkle of shredded cheddar cheese.

          Shape the Rolls: Starting from the wide end, roll the crescent dough towards the pointed end and pinch the edges to seal. Place each roll on the prepared baking sheet, spacing them about 2 inches apart.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the crescent rolls are golden brown and flaky.

              Serve: Remove from the oven and let cool for a few minutes. Serve warm with a dollop of sour cream, a sprinkle of fresh cilantro, and optional salsa on the side.
