Mini Breakfast Omelets (Egg Muffins With A Tater Tot Crust)

2 cups frozen tater tots

6 large eggs

1/2 cup milk (whole or alternative)

1 cup cheddar cheese, shredded

1/2 cup bell peppers, diced (any color)

1/2 cup cooked ham or cooked bacon, diced

1/4 cup green onions, chopped

Salt and pepper to taste

Cooking spray or oil for greasing the muffin tin

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Tater Tot Crust: In a large bowl, add the frozen tater tots. With your fingers or a potato masher, break them into smaller pieces. Press the tater tots into the bottom and up the sides of a greased 12-cup muffin tin, creating a crust. Bake in the preheated oven for about 15-20 minutes, or until golden and crispy.

      Make the Egg Mixture: In another large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the shredded cheddar cheese, diced bell peppers, diced ham or bacon, and chopped green onions. Mix until evenly distributed.

        Fill the Muffin Cups: Once the tater tot crusts are crispy, remove the muffin tin from the oven. Carefully pour the egg mixture into each tater tot crust, filling them about 3/4 of the way full.

          Bake the Omelets: Return the muffin tin to the oven and bake for an additional 15-18 minutes, or until the egg is set and slightly puffed.

            Cool and Serve: Once baked, allow the mini omelets to cool for a few minutes before gently running a knife around the edges to loosen them. Use a fork to carefully lift them out. Serve warm or at room temperature.
