1/4 cup diced cooked ham or cooked bacon (optional)

Salt and pepper, to taste

Fresh herbs (like chives or parsley), for garnish

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing each cup with cooking spray or lightly brushing it with olive oil.

    Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together with the milk, salt, and pepper until well combined and slightly frothy.

      Add Veggies & Protein: Stir in the chopped bell peppers, onion, spinach, shredded cheese, and any optional diced ham or bacon. Mix everything together until evenly distributed.
