Ingredients

2 cups cooked chicken, shredded

1 cup cooked rice (white or brown)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

½ cup diced green onions

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup crushed buttery crackers (like Ritz)

¼ cup melted butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions

Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, half the cheddar cheese, diced green onions, and frozen mixed vegetables. Season with garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Pour the chicken mixture into the prepared baking dish, spreading it evenly across the bottom.

In a separate bowl, mix the crushed buttery crackers with melted butter until well coated. Sprinkle this mixture evenly over the top of the casserole.

Top the cracker layer with the remaining cheddar cheese for a cheesy, golden finish.

Bake in the preheated oven for about 30-35 minutes, or until the casserole is bubbly and the top is golden brown.

Remove from the oven and let it cool for about 5 minutes before serving to allow it to set slightly.
