Mexican Macaroni Salad

Ingredients
  

2 cups elbow macaroni

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 jalapeño, minced (seeds removed for less heat)

1/2 cup red onion, finely chopped

1 cup cherry tomatoes, halved

1/2 cup cilantro, chopped

1 lime, juiced

1/4 cup mayonnaise

1/4 cup Greek yogurt (or sour cream)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Optional: crumbled feta or queso fresco for topping

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Ingredients: While the pasta cools, in a large mixing bowl, combine the black beans, corn, bell pepper, jalapeño, red onion, cherry tomatoes, and cilantro. Mix well.

      Make the Dressing: In a separate bowl, whisk together the lime juice, mayonnaise, Greek yogurt, cumin, chili powder, salt, and pepper until smooth. Adjust seasoning to taste.

        Combine: Add the cooled macaroni to the vegetable mixture, then pour the dressing over the top. Gently toss everything together until the pasta and veggies are evenly coated with the dressing.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
