9-12 corn tortillas

1 pound ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies

1 tablespoon taco seasoning

1 teaspoon cumin

2 cups shredded cheese (mix of cheddar and Monterey Jack)

1 cup salsa

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spoon, approximately 6-8 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.

        Add the Remaining Ingredients: Stir in the black beans, corn, diced tomatoes, taco seasoning, and cumin. Cook for an additional 5 minutes until heated through. Remove from heat.

          Assemble the Lasagna: In a 9x13 inch baking dish, spread a thin layer of salsa on the bottom. Place 3-4 corn tortillas over the sauce, overlapping slightly. Layer half of the meat mixture over the tortillas, followed by a mix of 1 cup of shredded cheese. Repeat these layers once more (tortillas, meat mixture, cheese). Top with remaining tortillas and the rest of the salsa. Finish with the remaining cheese on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.

              Cool and Serve: Allow the Mexican lasagna to cool for about 5-10 minutes before slicing. Garnish with chopped cilantro and serve with sour cream if desired.
