Mediterranean Quesadillas

4 large flour tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach, squeezed dry and chopped (fresh or frozen)

1 cup roasted red peppers, sliced

½ cup black olives, sliced

¼ cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

2 tablespoons fresh parsley, chopped (plus more for garnish)

Olive oil, for cooking

Salt and pepper, to taste

Instructions
 

Prepare the Filling: In a mixing bowl, combine the feta cheese, mozzarella cheese, cooked spinach, roasted red peppers, black olives, sun-dried tomatoes, oregano, garlic powder, and parsley. Season the mixture with salt and pepper to taste. Mix well to ensure all ingredients are evenly distributed.

    Heat the Pan: In a large skillet, heat a splash of olive oil over medium heat.

      Assemble the Quesadillas: Place one tortilla in the skillet and sprinkle a generous amount of the cheese and vegetable filling on one half of the tortilla. Fold the other half over the filling to create a semi-circle.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side, or until the tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes.

          Repeat the Process: Remove the cooked quesadilla from the skillet and keep it warm in a low oven. Repeat the process with the remaining tortillas and filling.

            Slice and Serve: Once all quesadillas are cooked, slice them into wedges. Serve warm, garnished with fresh parsley and a drizzle of olive oil or your favorite dipping sauce, such as tzatziki or hummus.
