Mediterranean Chicken Zucchini Boats

4 medium zucchinis

1 lb ground chicken

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup bell pepper (red or yellow), diced

1/2 cup feta cheese, crumbled

1/3 cup black olives, sliced

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Slice the zucchinis in half lengthwise and scoop out the seeds with a spoon to create boats. Lightly brush the insides with olive oil and sprinkle with salt and pepper. Place them cut-side up on a baking sheet.

      In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and bell pepper; sauté for 3-4 minutes until softened.

        Add the minced garlic and cook for an additional minute until fragrant.

          Add the ground chicken to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.

            Stir in the cherry tomatoes, oregano, basil, paprika, salt, and pepper. Cook for another 3-4 minutes until the tomatoes are slightly softened.

              Remove the skillet from the heat, then fold in the feta cheese and black olives.

                Stuff each zucchini boat generously with the chicken mixture.

                  Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the tops are lightly golden.

                    Remove from oven and let cool slightly. Garnish with freshly chopped parsley before serving. Enjoy your Mediterranean delight!
