4 boneless, skinless chicken breasts

1 cup orzo pasta

2 cups low-sodium chicken broth

1 medium red onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, oregano, and thyme.

    Sauté the Chicken: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced red onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and sauté for an additional 1 minute until fragrant.

        Cook the Orzo: Pour in the chicken broth and bring it to a boil. Once boiling, add the orzo and reduce the heat to a simmer. Cook the orzo according to package instructions, usually about 8-10 minutes, stirring occasionally.

          Combine Ingredients: When the orzo is almost al dente, add the cherry tomatoes, baby spinach, and Kalamata olives to the skillet. Stir everything together, allowing the spinach to wilt for about 2 minutes.

            Finish the Dish: Slice the cooked chicken breasts and nestle them on top of the orzo mixture. Sprinkle with crumbled feta cheese and let everything cook together for another 2-3 minutes.
