Ingredients

1 lb ground beef

1 lb spicy sausage (such as chorizo)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) refried beans

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 cup sour cream

1 cup cream cheese, softened

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tablespoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

¼ cup sliced jalapeños (optional, for extra heat)

1 cup chopped green onions (for garnish)

Tortilla chips, for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.

Cook the Meats: In a large skillet over medium heat, cook the ground beef and spicy sausage together until browned and cooked through. Drain excess fat if necessary.

Combine the Base: In a large mixing bowl, combine the cooked meat, black beans, refried beans, and diced tomatoes with green chilies. Mix until well combined.

Add Dairy: In the same bowl, add the sour cream, cream cheese, taco seasoning, garlic powder, onion powder, salt, and black pepper. Stir until everything is thoroughly mixed and creamy.

Cheese Layering: Gently fold in 1 cup of cheddar cheese and 1 cup of Monterey Jack cheese into the mixture. Reserve the remaining cheese for topping later.

Bake: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly, then top with the remaining cheddar and Monterey Jack cheese. If you’re using jalapeños, sprinkle them on top before baking.

Time to Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish & Serve: Once out of the oven, let it cool for a few minutes. Garnish with chopped green onions. Serve hot with tortilla chips for dipping. Enjoy your Tex-Mex Fiesta Dip!
