4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes

1 tablespoon Dijon mustard

2 tablespoons honey

1 tablespoon soy sauce

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the marinade: In a small bowl, whisk together olive oil, minced garlic, red pepper flakes, Dijon mustard, honey, soy sauce, lemon juice, lemon zest, thyme, salt, and pepper.

      Marinate the salmon: Place the salmon fillets in a shallow dish, and pour the marinade over them. Make sure the fillets are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for deeper flavor).

        Bake the salmon: Place the marinated salmon fillets on a lined baking sheet (skin-side down). Spoon any leftover marinade over the top of the fillets. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Serve and garnish: Remove from the oven, and transfer the salmon to serving plates. Drizzle with extra marinade from the baking sheet if desired. Garnish with chopped fresh parsley before serving.
