4 salmon fillets (6 oz each)

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1/2 cup cherry tomatoes, halved

1/2 cup heavy cream

1/3 cup white wine (such as Chardonnay)

1 tablespoon Dijon mustard

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Zest of 1 lemon

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Optional: Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a baking dish with cooking spray or a thin layer of olive oil.

    Prepare the Salmon: Season each salmon fillet with salt and pepper on both sides. Place them skin-side down in the prepared baking dish.

      Sauté Garlic and Tomatoes: In a medium skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for another 2–3 minutes until they begin to soften.

        Make the Cream Sauce: Pour in the white wine, scraping up any bits stuck to the pan. Let it simmer for 1-2 minutes to reduce slightly. Stir in the heavy cream, Dijon mustard, thyme, lemon zest, and lemon juice. Cook for another 3-5 minutes, stirring occasionally, until the sauce thickens slightly.

          Combine and Bake: Pour the creamy tomato mixture over the salmon fillets in the baking dish, ensuring each piece is well-coated.

            Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

              Garnish and Serve: Once cooked, remove from the oven and let it rest for a couple of minutes. Garnish with fresh basil leaves. Serve warm with lemon wedges on the side.
