1 cup heavy cream

1/2 cup semi-sweet chocolate chips

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh raspberries (plus extra for garnish)

1 tablespoon lemon juice

1 package (8 oz) cream cheese, softened

1/2 cup sour cream

1/4 teaspoon salt

6 chocolate wafer cookies, crushed (for base)

Instructions
 

Prepare the chocolate mousse:

    - In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring between each, until smooth. Allow to cool slightly.

      Whip the cream:

        - In a mixing bowl, whip the heavy cream using an electric mixer until soft peaks form. Gradually add in the powdered sugar and continue beating until stiff peaks form. Add in the vanilla extract and mix to combine.

          Combine ingredients:

            - In another bowl, beat the softened cream cheese until creamy and smooth. Add the sour cream, cooled melted chocolate, and lemon juice to the cream cheese, mixing until fully combined.

              - Gently fold the whipped cream into the chocolate mixture, being careful not to deflate the whipped cream, until no streaks remain.

                Prepare the raspberry layer:

                  - In a blender, combine fresh raspberries and lemon juice, blending until smooth. Strain through a fine mesh sieve to remove seeds if desired.

                    Assemble the cups:

                      - In serving cups or jars, place a layer of the crushed chocolate wafer cookies at the bottom.

                        - Add a layer of the raspberry puree, followed by a layer of the chocolate mousse.

                          - Repeat the layering process until the cups are filled, finishing with the chocolate mousse on top.

                            Chill:
